Ingredients:
2 tablespoons of Greek yogurt (without sugar added)
250 gr sugar
1 tablespoon of olive oil
250 gr all purpose flour
1 teaspoon of baking soda
lemon juice
1 apple (peeled, cored and diced)
1 pear (peeled, cored and diced)
3 eggs
Steps
- Preheat oven to 350 degrees F (175 degrees C).
- Grease and flour one inch cake pan.
- Beat oil and eggs in a bowl.
- Add the sugar and the yogurt and beat well.
- Combine the flour, baking soda together in another bowl.
- Slowly add this mixture to the egg mixture and mix until combined.
- Fold in the apple and pear by hand using a wooden spoon.
- Add few drops of lemon juice.
- Spread batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done.
