Ragu' sauce

This is my personal recipe of ragu' sauce.
With these ingredients you can fill approximately 8 vases jars which you can keep in the freezer and use when you need. There are different recipes in which you can use ragu' sauce, such as pasta with ragu', lasagne, pasta la forno and polenta pasticciata.

Preparation time: 30 minutes
Ingredients:

Extra virgin olive oil
1 brown onion, finely chopped
3 medium carrots, finely chopped
2 celery stick, finely chopped
500gr beef mince
3 cups of tomato sauce
1/4 teaspoon of nutmeg
salt
pepper

Steps:
  1. Fry in a pan the onion, carrot and celery on a low heat, until it first starts to brown. 
  2. Season with salt to taste.
  3. Add the beef mince and the nutmeg and cook until brown.
  4. When the meat appears dry, add tomato paste and continue cooking on a low heat. 
  5. Cook for one and half to two hours or until the meat is tender. 
  6. Skim any fat that rises to the top of the pan during cooking. Cover to keep warm and set aside.
Suggestions: Freeze left over ragu.
