Ingredients:
500 gr pasta brise '
800g courgettes
150 g tomato pulp
3 eggs
1 onion
50 g butter
50 of Parmesan,
basil
olive oil
salt
Steps:
- Fry in a large pan the chopped onion with 40 grams of butter and 2 tablespoons of oil
- Cut the zucchini and add them with the chopped tomatoes and few basil leaves
- Add a pinch of salt and cook over moderate heat until the zucchini are almost defeats.
- Remove from the heat and leave to cool.
- Meanwhile, roll out the dough and place it in a greased baking pan.
- Mix the egg yolks with the Parmesan and the zucchini, then complete the compound with the albumen.
- Place the mix on the pasta and cook it in the oven at 180 C for 35-40 minutes.
